A tri-ply pan for browning rather than steaming.
Non-stick has its place; this is not it. The Halden is uncoated stainless with a clad base, so it takes the heat needed to brown properly and cleans up with water and a scraper. Sloped sides make it as useful for a sauce as for a steak.
